Roasted Broccoli With Cheese Sauce

6- cups broccoli florets

10- tsp low-fat evaporated milk

1 1/2- oz. queso fresco

4 – tsp yellow curry paste

6 lower-sodium saltine crackers


Coat broccoli florets well with cooking oil.
Put broccoli florets into fryer basket, and cook at 375°F for 6 to 8 minutes.
Blend milk, queso fresco, curry paste, and saltines in a blender; process until smooth, about 45 seconds.
Put sauce into a microwaveable bowl.
Microwave on high until warm, about 30 seconds
Serve cheese sauce with broccoli.
