Mixed Vegetable Pancakes

INGREDIENTS

2 cups shredded vegetables

1 ½ cups almond flour

3 eggs

2 tsp. dried basil

2 tsp. dried parsley

Salt and Pepper to taste

3 tbsp. Butter

INSTRUCTIONS

Preheat the air fryer to 250 F.
In a little bowl, mix the ingredients until smooth.
Cook in oil on both sides of the pancake.
Serve with maple syrup.
